Who is Vito Iancopelli?

He was born in Bari, Italy, and grew up in his family’s pizzeria. His grandfather opened a pizzeria in the 1960s, and Vito learned everything about pizza from his grandfather and father. He is a third-generation pizza chef.

He started making pizza at the young age of just seven years old and has honed his skills over the years. He moved to the U.S. and helped open Michael’s Pizzeria in Long Beach, California. His work at Michael’s immediately earned him the title of “Best Pizza Joint in The USA” 2013-2014 by Zagat. In 2014, he opened his own “PROVA, The Art of Pizza” in Los Angeles. 

Earning much success from his restaurant, he took the “Best Neapolitan Pizza in The World” title in 2015-2016.  During the 2017 Pizza Expo Las Vegas, the international event where the best pizza makers from around the world are invited to compete, Vito took 2nd place for the “Best Neapolitan Pizza in America” and 2nd place for the “Best Neapolitan Pizza in The World”. 

In 2017, his pizzeria PROVA, was voted “The Best Pizzeria in Los Angeles & Southern California” by “Gambero Rosso”. 

In 2018, Vito then franchised three pizzerias under his name in Dubai, Egypt, and Colombia. In 2019, he opened his new pizzeria, PROVAMI by Vito Iacopelli, and once again won Zagat’s “Best Pizza in Los Angeles” by Zagat.

Vito’s plans include the continuation of opening up multiple franchise locations around the world. What is Neapolitan Pizza?

Neapolitan pizza is Vito’s specialty. The course covers all of the pizza basics, including this signature Vito specialty. Since Neapolitan pizza is different from other types of pizzas, you are probably familiar with, like New York-style and Chicago-style. Neapolitan pizza is slightly different in a few key areas.

Neapolitan pizza comes from Naples, and it’s considered the classic Italian pizza. It is basic bare-bones pizza dough, raw tomatoes, and mozzarella cheese. You won’t find any pepperoni, sausage, peppers, mushrooms, or the controversial pineapple on a Neapolitan pie. 

Another key distinction is that Neapolitan pizzas don’t come in sizes. You won’t find a large or family-size pizza because they are all the same size, usually about 10 to 12 inches. Neapolitan pizzas cook quickly in about 90 seconds at a very high temperature, around 850-900º Fahrenheit. 

Interestingly, Neapolitan pizzerias must be certified and follow certain guidelines to be considered Neapolitan. In Italy, pizza is serious business, and authenticity is rewarded. So to make the cut and get certified, your pizza must be made with Italian 00 flour and brewer’s yeast.

The dough must be mixed by hand and stretched by hand, with no rolling pins. This type of dough will cook into a bubbly charred perfect crust.

The sauce for a Neapolitan pizza must be freshly made with raw pureed San Marzano tomatoes from Italy. For cheeses, only high-quality mozzarella is allowed. You can use either fior di latte made with cow’s milk or mozzarella di Bufalo made with water buffalo milk only produced in certain regions of Italy. Lastly, the pizza must have fresh basil and drizzles with extra-virgin olive oil.

True Neapolitan pizzas only have three variations:

  • Marinara – tomato, garlic, oregano, and extra virgin olive oil
  • Margherita – tomato, fresh sliced mozzarella, fresh basil, extra-virgin olive oil
  • Margherita Extra – tomato, mozzarella di bufalo, fresh basil, and extra-virgin olive oil

So not only is Vito a master pizzaiolo, but he has won several awards for this very distinct classic Italian pizza. This is just one of the styles of pizza you will learn to make in his course.
