Pepperoni may be everyone’s number one favorite pizza topping, but sausage isn’t far behind, as it’s the second favorite pizza topping. Sausage can be smoky, mild, hot, and even sweet.

This multipurpose food works at any time of the day. Breakfast sausage in the morning, sausage roll at lunch, and a pizza with sausage for dinner, what a day that would be. If you love sausage like we do, you will be happy to know we made a list of the twelve choices of best sausage to buy online for homemade pizza.

What is Sausage?

Sausage is made from ground meat mixed with fat, salt, herbs, and preservatives. Sometimes other things are added as fillers, like grains or breadcrumbs. There are many different sausages from all over the world. There are so many meats that literally every country and cuisine has its own, from Polish kielbasa to Spanish chorizo to German bratwurst to Italian sausage.

When adding sausage to homemade pizza, the sky is the limit. You can use a crumbly sausage or slices of thick sausage. There are a lot of easy-to-add sausages to a homemade pizza.

While there are wide varieties of sausage, they usually fall into one of four categories:


Fresh sausages are made from chopped or ground fresh meat. They usually come in a casing that can be cooked in, or you can be removed and cook them directly in the pan. Fresh sausage needs to be precooked before adding it to your homemade pizza. You might be able to find some very fresh sausage at various pizza farms, too.


Pre-cooked sausages are made with puréed fillings. Depending on the fillings, they may be partially cooked before being put in the casing. Then they are fully cooked post casing. Examples of pre-cooked sausages are your basic hot dog, bratwurst, and mortadella.

Technically you don’t have to cook them, but they will taste better cooked. Cold hot dogs are not appealing. However, if you are adding these types of sausage to homemade pizza, you can slice and add without cooking.


Smoked sausages are cooked in a smoker or smokehouse, where the smoke cooks and preserves them. Examples of smoke sausage are Spanish andouille and Polish kielbasa.

Smoked sausages do not need to be cooked; you can eat them without cooking or throw them into other recipes. To use smoked sausage on pizza, just slice and top the pizza.


Cured sausages are made fresh and then salted and air-dried for anywhere between weeks and months at a time. The salt is used to cure them, and they need time to get their signature taste. Examples of cured sausages are Genoa salami and Spanish chorizo.  

Adding these to pizza is simple; just slice, and that’s it. For pizza, they are often sliced thin, but on a charcuterie board, the slices are a bit thicker for a tasty bite.
